I finally settled on Oatmeal Chocolate Chia Cookies [there I go with the 3 C’s again!]… it said ‘unique but familiar’. But don’t let the name fool you … this cookie is packed with flavors and has a little bit of something for everyone.
I will confess that in the past, I turned up my nose to any baked good that claimed to be ‘whole wheat’, ‘fat free’, or ‘healthy’. I wanted my sweet food sweet, and my wholesome food wholesome. But over the last few months my tastes have really started changed, and something about the standard chocolate chip cookie just wasn’t doing it for me anymore. I definitely wanted a dessert, but one that just had a little more…. depth.
In a Venn diagram of baking, this cookie falls right in the middle. I would ever go so far as to say that this is the ideal cookie for me right now. First and foremost… it’s a cookie. There is no confusion or ambiguity about the fact that you are eating a sweet, baked good. It’s the perfect amount of chocolate + coconut to satisfy a sweet tooth, but it has body. The oats + whole wheat flour give the cookie depth and complexity, and the flax + chia seeds help bring out the earthy, nutty base with an added super food oomph.
So far I’ve had one [read: two] fresh out of the oven, as a breakfast on-the-go, a post run treat, and as a dessert with a glass of wine. Every time, it’s left me feeling full, satisfied, and entirely guilt-free.
Maybe you’re a junk food junkie looking who is looking to cut back on their sweets, or you’re a health food addict in need a little treat. Maybe you just love cookies. Whatever your reason, this protein baked, whole grain good, satisfyingly sweet cookie is for you.
Oatmeal Chocolate Chia Cookies
Adapted from Art and the Kitchen
Makes about 3 dozen
1 1/3 c. whole wheat flour
1 ½ c. oats
¾ c. coconut
½ c. chocolate chips
¼ c. chia seeds
¼ c. flax seeds
1 t. cinnamon
½ t. baking powder
½ t. baking soda
½ t. salt
1 c. butter
1 c. packed brown sugar
1 t. vanilla extract
Preheat the oven to 350 degrees.
Mix all the dry ingredients together in a large bowl. In a separate bowl, cream together the butter + sugar. Add the egg and vanilla and mix well. Add the wet ingredients to the dry, and stir until well combine.
Drop the cookies onto a baking try, and slightly flatten with your fingers.
Bake for 12 minutes.
